An Unusual Cake Recipe With Chocolate and Zucchini

This is an interesting and different recipe for a cake, that the whole family will enjoy.

A Recipe for Cake With Zucchini and Chocolate

You Will Need:

1/2 cup to One C. choccie chips
three courgettes, approximately six inches long, cut into shreds (roughly 2 cups)
One t. ground cinnamon
2 1/2 cup cake flour
3 eggs
1/2 cup butter
1 t. vanilla
0.5 Cup ordinary sugar
One Cup brown or muscovado sugar
1/2 cup oil
1/2 cup buttermilk
4 tbsp cocoa
One t. salt
Two teaspoon bicarb of soda

Instructions:

In advance, preheat oven to 325 degrees F.

Lightly grease a Nonstick 9″ x 13″ Sheet Cake Pan and put to one side.

In mixing bowlmix the brown and white sugar, butter and oil.
Add eggs, buttermilk, and vanilla and mix thoroughly.

With the aid of a sieve, sift the salt, flour, cocoa, cinnamon and soda until well combined and lump free.

Stir both mixtures together

Stir in courgette and stir well.

Pour it all into pan and dot the top with chocolate chips.

Put into the oven and bake for approx 45 mins.

Allow it to cool a little, remove from tin and place on a rack to cool before serving.
