Ingredients:
Two Tbs butter
Two Tbs vegetable oil
Half a pound (3 cup) fresh mushrooms
half c. walnuts – finely chopped then toasted lightly
Two Tbs sherry or fortified wine
One tbsp lemon juice
one teaspoon finely grated orange/lemon peel
2 Tbs fresh parsley (chopped)
Salt
Directions:
In a large skillet mix the butter and oil and heat gently until blended.
Turn the flame up to medium/hot and put the mushrooms in the skillet, saute them gently until they are tender.
Now add the walnuts, sherry, lemon juice and citrus peel. Heat the mix for a minute or so, stirring well to guarantee the mushrooms are covered with the tasty mix.
Sprinkle with parsley and season with salt before serving.
